With a virus like SARS-CoV-2 what level of interaction would I need to have with it to become infected? In other words, if someone sneezes how far do I need to be before I will not be impacted by the sneeze.  I am assuming the 6ft rule implemented has to do with this answer, but is that really enough to not become infected?

Well, the 6 foot rule is relative; some people say 12 feet.  It depends on the force of the sneeze and how infectious the person sneezing is.  So, the answer is:  hard to tell.
